Oatmeal Cookies

  • 2 Tbsp margarine or butter
  • 3/4 Cup sugar
  • 1 medium eggs
  • 4 Tbsp applesauce
  • 2 Tbsp lowfat milk
  • 1 Cup flour
  • 1/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1 1/4 Cup quick cooking oats
Preheat oven to 350 ℉. In a bowl, mix butter or margarine and sugar with an electric mixer until well blended, about 2-3 minutes. Add egg and mix on medium speed for 1 minute. Add applesauce and milk. Mix another 1 minute. In a separate bowl, combine flour, baking soda, and cinnamon. Add this to the applesauce mixture. Mix on low speed until blended, about 2 minutes. Add oats and blend on low speed for about 30 seconds. Drop by rounded teaspoons about 1.5 inch apart onto lightly greased cookie sheet. Bake until lightly browned, about 12-15 minutes. Cool on a wire rack.
